Well, if you know me at all you will know that I am certainly no whiz in the kitchen! Throw a good kitchen hack at me any day and i'll grab it with both hands!! Before children I used to love cooking and having dinner parties but now it just seems all too hard and to be honest kids meals don't really get me very excited.
So when a friend came to stay and whipped up this little number for all of the kids I was rapt! Ridiculously easy, quick and you only need two very basic ingredients! Greek yoghurt and self raising flour!!!
- Prep time:10 mins Cook time:15 mins Makes:8 - 10 pizzas
- 4 cups self-raising flour, plus extra to dust
- 4 cups natural greek yoghurt
- 2 tsp salt (not essential)
Preheat oven to 200 ̊C fanbake and place oven trays in oven to preheat.
Mix flour, yoghurt and salt to create a soft, sticky dough. Divide into 8-10 pieces, sprinkle with extra flour and use well-floured hands to press each out to the size of a small dinner plate on a lightly floured sheet of baking paper.
Top with tomato paste or sauce and whatever toppings you like and then slide pizzas on their baking paper onto preheated trays and bake until cheese is melted and bubbling and base is golden (10-15 minutes).

As it turns out the recipe in one from Annabel Langbein's cookbook so even the pro's will back me up! They come out doughy and delicious - just as nice as yeast bases (if not better!)
My boys love making these bases and coming up with their own toppings and it's pretty much no fail so it gives you something entertaining and fun to do with them!
Also - it takes so little time to make that you can whip up some mini pizzas for the kids lunch boxes while they are having breaky if you are struggling for different lunch ideas.
