I have tried a lot of homemade seedy bread recipes but have to say that this is definitely the easiest and is super delicious! Slap on a bit of nut butter or a poached egg and you have an awesome filling meal or snack.
Maca & Chia Seed Bread
1/2 cup linseeds
3/4 cup sesame seeds
3/4 cup sunflower seeds
3/4 cup pumpkin seeds
1/2 cup whole nuts such as almonds
1/4 cup psyllium husks
2 Tbsp maca powder
2 Tbsp olive oil
2 tsp sea salt
4 large eggs
1/4 cup water
2 Tbsp chia seeds
Preheat oven to 160 C and line a loaf tin with baking paper.
Combine all ingredients in a bowl and mix well until evenly combined, wet and thick.
Set aside at room temperature for 15-20 minutes to allow the chia seeds, linseeds and psyllium husk to absorb some of the moisture.
Pour mixture into the lined loaf tin and spread to the edges. Bake for 60 minutes.
Remove the bread from the baking paper and leave to cool before slicing.
